Smoky Kashmiri chilli, charred masala and a bright, almost amchur tang. It tastes like the char you chase off the side of a tandoor, on a proper cut of British topside. Bold heat, clean finish.
Our second recipe is still being tested. We're deciding between a warm, aromatic masala and something tangier and more chaat-like, so the heat and the spicing aren't locked in yet. We'll show it here properly once it is.

Tandoori isn't a flavour we picked off a shelf. It's the food we grew up loving: the smoke of a clay oven, the char on the edge of a piece of tikka, a marinade built from whole spice rather than a bottle. Blaze & Char takes that dhaba-and-home-kitchen flavour and slow-dries it onto British halal-sourced topside, so you can carry it in your pocket.
There's no soy sauce, no MSG and no artificial preservatives in it, and there's nothing quite like it on a UK shelf yet. We make every pouch by hand in small batches and seal it the day it comes off the rack.
Every batch is small, just a few kilos of beef at a time, hand-rubbed, rested and slow-dried.

Kashmiri chilli, cumin, smoked paprika, turmeric, kasuri methi and black cardamom, toasted and ground the morning we marinate so nothing sits around going stale.

British topside is tumbled in a wet marinade of white wine vinegar, tomato purée, lemon juice, pineapple powder, ginger and garlic. The pineapple is what tenderises it. Then it rests cold so the spice can work its way right through.
63°C dry, then a 135°C kill-step
We dry it low and slow at 63°C until each strip tears clean, then finish with a short, hot blast at 135°C so it's safe to keep at room temperature. We pull the batch the moment it's right and no further.
We're just getting started, so we won't pretend to have decades-old supplier relationships. What we can tell you is where the beef and spices come from, and why we chose them.
Beef born, reared and slaughtered in the UK, sourced from our local halal butcher. We use topside, a lean and flavourful cut that dries cleanly and tears rather than shatters. As we grow we’ll name our butcher publicly, once that relationship is properly established.

Most British jerky on the shelf is either BBQ-sweet or peri-peri hot, made with reformed meat and shortcut spice mixes. We're making the opposite. Here's what that means in practice.
Born, reared and slaughtered in the UK, bought from a local halal butcher rather than a factory line. No reformed, pressed or injected meat. One cut, topside, sliced against the grain by hand so every strip bites the same way.

A few hours in the marinade, then low and steady at 63°C in the drier, finished with a short blast at 135°C so it keeps without anything artificial. Sealed the day it comes off the rack, every pouch labelled with its batch and best-before. When we sell out we actually sell out, because we only make what we can make by hand in a day.
No HMC certification yet, and we'll say so until we pass their audit. Not in any shop yet. Haven't sold a pouch yet. No invented nutrition panels: lab-tested values land before the first pouch ships. What's on the pack is what's in the pack.
